At their own L’Aranyó estate in the heart of Les Garrigues, Torres cultivate centuries-old Arbequina olive trees following the most exacting and time-honoured methods laid down by of their former keepers, the Monks of Monserrat. The olives enjoy good soil, light and temperatures and, when they are just beginning to ripen, are harvested and cold-pressed on the same day. Only oil from the first pressing is used for El Silencio, so the oil is exceptionally smooth and highly concentrated in its characteristic fruitiness and aromas of green grass, tomato and almonds.

The Spanish proverb ‘from good wine, good vinegar’ could not ring more true than from Torres. High quality Parellada white wines with intense fruity and floral character are selected for this product. The fermenting and aging creates rich, fine and smooth white wine vinegar, yellow in colour with light golden nuances. It offers fine aromas of wild flowers, is rich in fruit (quince, plum jam, ‘Reinata’ apples) and has toasty nuances from the ageing. It is smooth on the palate with perfect balance between acidity and sweetness.
